Thai Noodles

time: Approximately 15 minutes
*In
a large non stick wok or saucepan, dry fry
450g (1lb) lean Northern Ireland Farm Quality
Assured minced beef and 4 lean back bacon
rashers, chopped, until browned. Add 1 red
onion, finely sliced and cook for 2 minutes.
*Add
600ml (1pt) stock, 30 ml (2tbsp) red or green
Thai curry paste, 300g (10oz) pre-cooked packet
noodles or 150g (5oz) dried noodles, cooked.
Cover and simmer for 3-4 minutes.
*Serve
with extra steamed sugar snap peas, spring
onions and fresh coriander.
