*In
a large non-stick wok or saucepan, dry fry
450g (1 lb) Northern Ireland Farm Quality
Assured lean minced beef, 2 cloves garlic,
crushed, and 1 onion, finely chopped, until
browned. Add 100g (4 oz) mushrooms, sliced
and cook for 1-2 minutes.
*Add
400g can chopped tomatoes, 30 ml (2tbsp) tomato
puree, 30 ml (2 tbsp) tomato ketchup, 30 ml
(2 tbsp) fresh mixed herbs, chopped, or 5
ml (1 tsp) dried mixed herbs and simmer for
2-3 minutes. Season with salt and pepper.
*Place
half the mince mixture in a 25cm (10") square
ovenproof dish. Cover with 4 large white pitta
breads (they will overlap). Top with the remaining
mince mixture, slice 2 tomatoes and cover.
Take 50 g (2oz) soft cream cheese and place
small teaspoons over the tomatoes and sprinkle
over 50g (2 oz) low fat cheese, grated. Place
in a pre-heated oven and cook for 15-20 minutes.
*Serve
with mixed salad and garlic bread.
